Spanish Paella Recipe

I recently tried this paella recipe, and it turned out to be a huge hit, especially with the younger members of my family. I’ll admit, when you think about seafood, you don’t immediately picture it being kid-friendly, but my 3-year-old twins and 6-year-old absolutely loved it. They even polished off their portions entirely, leaving clean bowls behind—a rare sight at dinnertime! This dish has now become a regular on our menu, which is quite a feat considering how picky my kids can be.

For context, I’ve been experimenting with variations of this recipe for years, but always without the seafood because I wasn’t sure how my kids would take to it. However, after purchasing a pack of pre-cooked seafood with shells already removed, I decided to give it a shot. The convenience of not having to deal with the shells myself—and knowing the girls wouldn’t have to worry about them either—made the entire cooking process smoother. It also seemed to make the dish more appealing overall, both for me and for them.

Ingredients

  • 150g chicken breast
  • 100g chorizo
  • 2 peppers
  • 150g green beans
  • 1 tsp garlic
  • 2 tsp smoked paprika
  • 175g paella rice
  • 1 liter of chicken stock
  • 1 pack of pre-cooked seafood
  • Lemon

Method

Start by frying the chicken breast in olive oil until it’s lightly golden. Add the chorizo slices for the last minute of cooking to infuse the flavor.

Once done, remove the chicken and chorizo from the pan. Next, sauté the onions and garlic until they’re golden, then add the green beans and peppers to the mix.

After that, toss in the rice, chicken stock, and smoked paprika. Return the chicken and chorizo to the pan and let everything simmer for about 15 minutes.

Finally, stir in the pre-cooked seafood and continue to simmer for another 3–4 minutes. Serve with a generous squeeze of fresh lemon juice.

My daughter Molly had a blast helping me prepare this dish. She enjoyed chopping the vegetables and was particularly curious about the seafood, asking lots of questions about what each type was called. It’s moments like these that make cooking together so rewarding!
