This summer turned out to be quite the culinary challenge for us since we didn’t have an oven. That meant I had to get creative and spend a lot of time searching for no-bake recipes. One day, while scrolling through Pinterest, I stumbled upon a recipe that seemed perfect for our situation—a healthier version of the classic Bounty bar. Excited by the idea, I decided to give it a try.
The ingredients list was simple enough:
- 1 cup of coconut cream
- 3 tablespoons of honey
- 2 cups of desiccated coconut
- 2 bars of dark chocolate
I started by mixing the coconut cream, honey, and desiccated coconut together in a bowl until everything was well combined. Once mixed, I spread this mixture evenly into a baking dish lined with parchment paper and pressed it down firmly to create a smooth surface. Afterward, I cut the mixture into equally sized bars and placed them in the freezer for about an hour to firm up.
Next came the chocolate part. I melted two bars of dark chocolate using a double boiler method to avoid burning it. Then, I dipped each frozen coconut bar into the melted chocolate, ensuring they were fully coated before placing them back into the fridge to set. The result? Bars that were creamy, chocolatey, and delightfully light—a far cry from their sugary counterparts!
To add a touch more healthiness (or at least convince ourselves we were being virtuous), we poured some extra melted chocolate over the tops of the bars instead of fully coating them. While this did make them slightly crumblier, it also reduced the overall amount of chocolate per bar. However, there was one unexpected consequence: my daughter, Charlotte, couldn’t resist eating these bars immediately after they were ready. She loved them so much that she kept sneaking into the kitchen whenever she thought I wasn’t looking!
Despite this minor hiccup, we all thoroughly enjoyed these healthier Bounty bars. They’re not only delicious but also satisfying without feeling overly indulgent. Plus, knowing that we managed to create something tasty and relatively nutritious made the entire experience even more rewarding.
