This summer turned out to be quite the baking challenge for us since we didn't have an oven. As a result, I found myself spending a lot of time hunting for no-bake recipes. One day, while exploring different ideas, I stumbled upon a recipe that we decided to tweak to create a healthier version of the classic Bounty Bar.
The first step was to gather our ingredients: one cup of coconut cream, three tablespoons of honey, and two cups of desiccated coconut. For the outer layer, we used two bars of dark chocolate to keep things on the healthier side. Here's how it all came together:
After mixing the coconut cream, honey, and desiccated coconut thoroughly, we spread the mixture evenly into a greased baking pan and pressed it down firmly. Once set, we cut it into uniform bars and placed them in the freezer for about an hour to firm up.
Next, we melted the dark chocolate and dipped each bar into it, giving them a light coating. Then, we transferred the bars to the refrigerator to let the chocolate set.
The end result was nothing short of amazing—creamy, chocolatey, and delightfully light. The combination of flavors and textures made these bars a real treat.
We thought adding a bit of chocolate on top would make them healthier, but this decision had its downsides. While it added a nice touch, it also made the bars a little crumbly. The chocolate didn’t fully encase the coconut layer, which was something we hadn’t anticipated. Another issue we encountered was how sensitive our little girl, Charlotte, seemed to be to the chocolate. It’s always a bit tricky when dietary preferences or sensitivities come into play.
Despite these minor challenges, we’re happy with how the bars turned out. They’ve become a favorite snack around here, especially during these oven-less days. It just goes to show that with a little creativity and some simple tweaks, you can still enjoy delicious treats without the need for an oven. Now, if only we could figure out how to keep Charlotte from sneaking too many of them!
