Spanish Paella Recipe

The girls absolutely adored this paella recipe. It’s funny because you’d assume seafood wouldn’t be a hit with young kids, but my 3-year-old twins and 6-year-old son cleaned their plates by the end of the meal. This dish is definitely finding a regular spot on our dinner table. For years, I’ve been making a version of this recipe without the seafood, but I decided to give an authentic take a shot. I picked up a pack of mixed seafood with the shells already removed, which made it much easier to prepare and much more appealing for everyone involved. [Insert image description: A vibrant paella dish filled with colorful ingredients, including chicken, chorizo, peppers, green beans, and a mix of seafood, all topped with a hint of lemon.] Ingredients: - 150g of chicken breast - 100g of chorizo - 2 peppers - 150g of green beans - 1 tsp of garlic - 2 tsp of smoked paprika - 175g of paella rice - 1 liter of chicken stock - 1 pack of pre-cooked seafood - Lemon slices Method: Start by frying the chicken in some oil until it's lightly golden. Add the chorizo during the last minute of cooking. Remove everything from the pan. Next, fry the onions and garlic until they're golden brown, then toss in the green beans and peppers. Stir in the rice, chicken stock, and smoked paprika, and return the chicken and chorizo to the pan. Let it simmer for about 15 minutes. Finally, stir in the pre-cooked seafood and let it simmer for another 3 minutes. Serve with a squeeze of fresh lemon juice.
